3 Cheese Macaroni and Cheese with Country Smoked Bacon

(Best Home Made Mac & Cheese EVER!)


Ingredients:

8 oz. package small pasta shells

Salt and ground black pepper to taste

1 pinch garlic salt

3 tsp. butter

1-1/2 cans (11 oz.) condensed cream of cheddar cheese soup

1/3 cup shredded havarti cheese

1/4 cup grated parmesan cheese

3/4 cups shredded white cheddar cheese (reserve a 1/4 cup cheese to top casserole)

4 strips thick-sliced country smoked bacon (or regular bacon), cut into 1/2-inch pieces

Directions:

Preheat oven to 350°F (175°C). Bring a large pot of lightly-salted water to a boil. Cook the pasta until al dente, 8 to 10 minutes, then drain. Transfer the pasta to a casserole dish. Season with salt, pepper, and garlic salt. Stir the butter into the pasta mixture until the butter melts. Add the cheddar cheese soup, havarti cheese, parmesan cheese, and 1/2 cup of white cheddar cheese; stir well. Bake for about 25 minutes. While the mac and cheese is baking, fry the bacon in a skillet over medium-high heat until crisp, about 5 minutes. Transfer to a paper-towel-lined plate. Top casserole with crumbled bacon and reserved cheddar cheese. Place under broiler for about 10 seconds until the cheese melts. Serve hot.


Olive Garden Toscana Soup
(Love this when it gets cold outside.  It tastes just like the real thing!)
2 3/4 cups chicken stock or broth
1/4 cup heavy cream
1 medium russet potato
2 cups chopped kale
1/2 pound spicy Italian sausage
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes

1. Combine the stock and cream in a saucepan over medium heat.
2. Slice the unpeeled potato into 1/4 inch slices, then quarter the slices and add them to the soup
3. Add the kale.
4. Grill or saute the sausage.  When cooked and cooled, cute the sausage at an angle into slices about 1/2 inch thick.  Add the sausage to the soup.
5. Add the spices and let the soup simmer for about 1 hour. Stir occasionally.

A couple things I do different.  I add more potatoes and I use ground mild sausage then you don't have to slice it.


Chicken Pillows

Ingredients:

Pack of boneless, skinless chicken

1 package of cream cheese

1 cup shredded cheese

Garlic salt and pepper

Package of crescent rolls

Melted butter

Bread Crumbs


Boil chicken. Shred chicken. Add cream and shredded cheese. Add garlic salt and pepper.

Take a spoonful of ^all that^ and put in middle of unfolded roll.

Fold roll like a pillow. Roll in melted butter. Roll in bread crumbs. Place on cookie sheet. Bake as directed on roll package. Dip in spagehtti sauce or melted cheese!!

banana cookies
1 cup shortening

1 cup sugar

2 eggs

1 cup mashed bananas

1 1/2 cup buttermilk

1 tsp. vanilla

3 cups flour

1 1/2 tsp. soda

1/2 tsp. salt



cream shortening, sugar, and eggs. add mashed bananas, buttermilk, and vanilla. sift in flour, soda, and salt. sometimes i chill the dough for an hour, sometimes not...drop by spoonfuls onto cookie sheet and bake at 375 for 8-10 minutes.


Asian Beef Noodle Toss

(yummy and easy-Ramen reinvented)

1 lb. ground beef
2 packages of Oriental flavored Ramen
1 bag mixed frozen veggies (like broccoli, carrots, peppers, water chestnuts)
1 green onion
2 cups water

In a skillet, brown ground beef into chunks - drain grease and add one flavoring package to beef.
Transfer cooked beef to separate container.
Break apart Ramen noodles and place in skillet on Med to Med-High heat. 2 cups of water, bag of frozen veggies and last flavoring package.
Stir occasionally, bring to boil then reduce heat and simmer for about 4 min.
Add in beef and stir. Then add in chopped onion or garnish.

Serves 4
